Signs of Authentic Paella
Real paella is cooked to order, which means it takes time — typically 20 to 25 minutes. If it arrives in 5 minutes, it was pre-made. Look for these signs:
- Cooked in a wide, flat pan — the traditional paellera
- Socarrat — a slightly crispy, caramelised layer at the bottom
- Fresh seafood — whole prawns, mussels in shell, not just frozen bits
- Proper rice — each grain should be separate, not mushy or soupy
- Minimum 2 people — real paella is never made for one person
